Christmas Goodies 2012

This year on the Christmas baking agenda we have, drum roll please: Sugar Cookies Gingerbread Cookies Chocolate Fudge Peanut Butter Fudge Pretzel Treats Oreo Truffles For pics of a few of these, check out last year's post. If I get all of the above done and am not feeling too crazy, I might try to make these peppermint treats again. They're last on the list b/c my hubs doesn't really like peppermint, but it is one of my favorites! :)

Zucchini Chocolate Chip Muffins

Zucchini Chocolate Chip Muffins

1 1/2 cups flour
3/4 cup sugar
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 egg, lightly beaten
1/2 cup oil
1/4 cup milk
1 Tbs lemon juice
1 tsp vanilla
1 cup shredded zucchini
1/4 - 1/2 cup mini semi-sweet chocolate chips (I usually use the 1/2 cup of coarse - you can never have too much chocolate :)).

Combine flour, sugar, baking soda, cinnamon and salt.
In a separate bowl, combine the egg, oil, milk, lemon juice and vanilla; mix well. Stir into dry ingredients just until moistened.
Fold in zucchini and chocolate chips.
Fill muffin cups 2/3 full.
Bake at 350 for 20-25 minutes or until done.
Makes 12 muffins.
I usually double the batch since they go so fast. They freeze well, too.

Zucchini, Zucchini, Zucchini

When a sweet friend from church gave us a couple zucchini and I didn't have any go to recipes, I went to facebook and posted my problem. The result: MANY recipes from other sweet friends!

So far, I've tried two and I will post them here because they got rave reviews from friends and family. As I try the other recipes, I'll post the ones we like as well. For now, here are the two that have become favs here:
