French Toast is my favorite breakfast food, so I'm excited about trying this one!
French Toast Bake
Ingredients:
12 slices of day old French bread
5 eggs
2 1/2 cups of milk
1 c. packed brown sugar (divided)
1 tsp. vanilla
1/2 tsp. cinnamon
1/4 c. butter melted
1. Arrange bread in a grease 9x13 pan
2. In a bowl, combine eggs, milk, 3/4 c. brown sugar, vanilla and cinnamon, pour over bread
3. Cover and refrigerate overnight (8-12 hours)
4. Combine butter and remaining brown sugar and drizzle overtop.
5. Bake uncovered @ 400 for 25-35 minutes.
First, let me say that I'm not a gourmet chef. I don't even LOVE cooking-baking is a different story. However, necessity often brings me to the kitchen to cook a meal. And I do love a tried and true recipe. So, here is a collection of recipes I've gathered from friends and the interwebs. These have helped me to enjoy my time in the kitchen a bit more! Brunch Enchilladas
We're having breakfast for dinner after our evening service tonight. Here's what's on the menu:
Brunch Enchilladas and French Toast Bake (that recipe and pics of each will follow shortly).
Brunch Enchilladas
Ingredients:
1 lb. sausage cooked
1/2 c. chopped green onions
10 flour tortillas (8 inch)
2 cups shredded cheddar divided
1 Tsp. flour
2 c. milk
6 eggs beaten
1/4 tsp. salt
1. Grease a 9x13 baking dish
2. Cook sausage, then combine it with the chopped onions
3. Place about 1/3 cup of the mixture in a line down the center of a tortilla shell
4. Sprinkle cheese on top of the meat mixture, roll up and place seam side down in the baking dish.
5. In a bowl, combine flour, milk, egss and salt.
6. Pour over the tortillas and refrigerate overnight (8-12 hours)
7. Remove from the refrigerator 30 minutes before cooking. Preheat oven to 350
8. Bake covered for 30-35 minutes, uncover and bake for 10 more minutes.
9. Sprinkle cheese over top and bake for 3-5 more minutes.

4 Cheese Quiche
My mother in law made this for a cousin's bridal shower and it was delicious. I have only made it once, but it was equally delicious and pretty simple. If you're looking for a yummy quiche recipe, look no further. If you're looking for healthy, you might want to look elsewhere! ;)

Ingredients:
1 pie shell
4 large eggs
1 Tbs flour
½ tsp salt
¼ tsp pepper
½ tsp celery salt
¼ tsp nutmeg
1 c. grated cheddar cheese
½ c. grated mozzarella cheese
½ c. grated Swiss cheese
½ c. grated parmesan cheese

1. Preheat oven to 350F
2. Put pie shell in a deep pie dish
3. Put meat and cheese in the pie shell
4. Mix the remaining ingredients (eggs, flour, and seasonings) together and pour over meat and cheeses
5. Bake for 30-35 minutes.
