Zucchini Bread

Zucchini Bread

3 oz cream cheese, softened
3 T vegetable oil
1 c sugar
2 eggs
1 c shredded, unpeeled zucchini
Grated rind of 1 lemon
2 1/4 c flour
1 tsp baking soda
3/4 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
1/2 c raisins (opt.)

Preaheat over to 350.
Beat together cream cheese, oil, and sugar.
Add eggs, on at a time, and continue beating until the mixture is light.
Stir in the zucchini and lemon rind.
Sift flour with baking soda, cinnamon, nutmeg, and salt and fold into batter gently.
Turn batter into a loaf pan and bake approximately 1 hr. 15 min.
Cool in the pan on a wire rack.

Zucchini Chocolate Chip Muffins

Zucchini Chocolate Chip Muffins

Ingredients:
1 1/2 cups flour
3/4 cup sugar
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 egg, lightly beaten
1/2 cup oil
1/4 cup milk
1 Tbs lemon juice
1 tsp vanilla
1 cup shredded zucchini
1/4 - 1/2 cup mini semi-sweet chocolate chips (I usually use the 1/2 cup of coarse - you can never have too much chocolate :)).



Combine flour, sugar, baking soda, cinnamon and salt.
In a separate bowl, combine the egg, oil, milk, lemon juice and vanilla; mix well. Stir into dry ingredients just until moistened.
Fold in zucchini and chocolate chips.
Fill muffin cups 2/3 full.
Bake at 350 for 20-25 minutes or until done.
Makes 12 muffins.
I usually double the batch since they go so fast. They freeze well, too.

Zucchini, Zucchini, Zucchini

When a sweet friend from church gave us a couple zucchini and I didn't have any go to recipes, I went to facebook and posted my problem. The result: MANY recipes from other sweet friends!

So far, I've tried two and I will post them here because they got rave reviews from friends and family. As I try the other recipes, I'll post the ones we like as well. For now, here are the two that have become favs here:
