First, let me say that I'm not a gourmet chef. I don't even LOVE cooking-baking is a different story. However, necessity often brings me to the kitchen to cook a meal. And I do love a tried and true recipe. So, here is a collection of recipes I've gathered from friends and the interwebs. These have helped me to enjoy my time in the kitchen a bit more! I hope it will help you, too!

Christmas Goodies 2012
This year on the Christmas baking agenda we have, drum roll please:
Sugar Cookies
Gingerbread Cookies
Chocolate Fudge
Peanut Butter Fudge
Pretzel Treats
Oreo Truffles
For pics of a few of these, check out last year's post.
If I get all of the above done and am not feeling too crazy, I might try to make these peppermint treats again. They're last on the list b/c my hubs doesn't really like peppermint, but it is one of my favorites! :)

Zucchini Chocolate Chip Muffins
Zucchini Chocolate Chip Muffins
Ingredients:
1 1/2 cups flour
3/4 cup sugar
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 egg, lightly beaten
1/2 cup oil
1/4 cup milk
1 Tbs lemon juice
1 tsp vanilla
1 cup shredded zucchini
1/4 - 1/2 cup mini semi-sweet chocolate chips (I usually use the 1/2 cup of coarse - you can never have too much chocolate :)).
Combine flour, sugar, baking soda, cinnamon and salt.
In a separate bowl, combine the egg, oil, milk, lemon juice and vanilla; mix well. Stir into dry ingredients just until moistened.
Fold in zucchini and chocolate chips.
Fill muffin cups 2/3 full.
Bake at 350 for 20-25 minutes or until done.
Makes 12 muffins.
I usually double the batch since they go so fast. They freeze well, too.

Zucchini, Zucchini, Zucchini
When a sweet friend from church gave us a couple zucchini and I didn't have any go to recipes, I went to facebook and posted my problem. The result: MANY recipes from other sweet friends!
So far, I've tried two and I will post them here because they got rave reviews from friends and family. As I try the other recipes, I'll post the ones we like as well. For now, here are the two that have become favs here:

Zucchini Bread

update/Christmas Goodies
Our family has welcomed a new addition. That's right, I had our third boy just days before Thanksgiving. He's been a joy--besides those middle of the night times! ;) Thankfully, he's still in that teeny-tiny-sleeps-a-lot-of-the-time mode, so I've been able to make some goodies with the kiddos. Here's our Christmas goody menu:
Cut-out cookies

Gingerbread cookies

pretzel/rolo treats

Oreo truffles
